Easter Lunch

Easter Lunch is forever a wonderful occasion, with family or with friends. This year we have both gathering together. Easter lunch in Britain and Ireland will usually be the best spring lamb and of course a chocolate dessert. The earliest mint is previously growing in the garden so starter will be a light and flavorful Pea and Mint Soup. Pea and Mint soup is simple, quick and easy to make and if fresh peas aren't available frozen work just as well.

For completely cooked roast leg of lamb, one of the best ways to cook it in a Blanket. Perfect Roast Lamb, Cooked in a Blanket may seem an odd way to cook lamb, but is based on an old method of cooking when the meat would have a long slow cooking wrapped in hay. I was first taught this method of cooking when I lived in France. Initially I was skeptical and a little scared, but assured by my teacher that I would marvel at the results, and I did. It has been my preferred method of cooking ever since. Crisp, golden brown, roasted potatoes straight from the oven delicious with the lamb and a dish of early Potatoes.

Making the ideal roast potato isn't difficult as you can see in the roast potato recipe. If you have a large dinner to prepare and are pushed for time the potatoes can be half roasted the day before then reheated for 20 mines in a hot oven. Easter lunch just wouldn't be the same exclusive of a chocolate dessert. For a chocolate blow-out choose from this medley of Chocolate Recipes. I am going to make it a little lighter with a Chocolate and Raspberry Meringue and for those who need a diminutive more chocolate, there's Chocolate and Nut Brownies to nibble on with coffee.
